YUJI Ramen was conceived in an effort to introduce new variations of Japanese ramen to the United States.
With a background as a seafood supplier and a familiarity with the New York restaurant industry, Yuji began exploring ramen as a means of showcasing seasonal ingredients and underutilized, local seafood. His mazemen — a brothless style of ramen that excels in integrating multiple flavors and textures — began attracting attention and encouraged Yuji to expand his project.
After a long stint as a pop-up restaurant in outdoor markets, bars, and grocery stores, YUJI Ramen now occupies a more permanent home at Okonomi. Over the years, its menu has evolved to include a rotating selection of mazemen as well as ramen floating in seafood-based broths, enriched with light seasoning, and topped with fresh fish and seasonal vegetables.
